Do you have tried and true pot roast recipe?

I am looking for a 'great' tasting pot roast recipe to serve 6 people.....I am thinking chuck roast, and I am wondering whether it should be cooked a day ahead and re-heated...I need to serve a one pot dinner as I will be gone most of the day company arrives....I know slow cooker is very helpful, but sometimes the meat ends up tasting more 'boiled' than roasted .
any suggestion/recipes/thoughts would be greatly appreciated
Also suggestions as to what I should serve with it...thanks!
