Tried and true onion roll recipe?

Question

My mom wants to make homemade onion rolls (like the kind that's used for deli sandwiches). I'd love to know if anyone has a tried and true recipe that works? A quick google search uncovers some possibilities, but none of them seem super well-tested.

Just wanted to follow up and say that my mom used this recipe:

Ratner's was a famous dairy restaurant on the Lower East Side of New York, famous for its Onion Rolls: 1 pkg yeast, 1 cup warm water, 2 tablespoons sugar, 1 1/2 tsps salt, 3 eggs, 6 tablespoons oil, 4-5 cups flour, 1 egg for wash. Filling: 1 cup finely chopped onions, 1 tsp salt, 1 tablespoon poppy seeds, 1 tsp caraway seeds, 1 cup dry bread crumbs, 1/4 cup oil. Soften yeast in water. Add sugar, salt, egg, oil, and flour to make a soft dough. Knead. Let rise to double. Punch down and knead again. Roll into oblong 18 x 24. Cut into 12 pieces 6 x 3. Mix filling and spread 3/4 of it on dough. Fold crossways in thirds. Place rolls seam side down on greased cookie sheet. Flatten to 5" long nd cut in half to make a total of 24 rolls. Brush with egg wash (beat egg with a tablespoon of water) and sprinkle tops with remaining onion filling. Let rise again. Bake 15-20 minutes. Recipe says 400* but I might cool that a bit. COMMENT: This recipe is taken from Ratner's cookbook which I had but no longer have, I think it fell apart, so I can't give citation. But just now I looked on Wikipedia and they give the full title plus there's a photo of the onion rolls. Ratner's closed in 2002. After we moved from New York to Washington in 1966, every time we went up to the city we went home with a carload of onion rolls for the freezer. Best.
