Hi!

So a few years ago in East LA i came across a tripe stew of sorts that was ridiculously spicy and wonderful. I have never found it again. I assume it was a variety of pancita de res?

Either way, I am going to be spending a week in Mexico City and I would love to try and track down this dish. Does anyone know where I can get good pancita in Mexico City? Also, would it be best to only seek out this dish on weekends, and in the morning?

Happy to travel far and wide for the best tripe soup!

(as an aside, if you can recommend any other spicy stews i can eat while in Mexico City, please let me know! I want to really try and eat more than tacos!)
