Tools and gizmos for raw food?

I'm just starting to research various gizmos used extensively by those raw food chef types and was wondering if there are any of you who are into raw food that use these things at home (and what for for what purpose?).

I'm looking for two items for now that are a major convenience to those into consuming raw food and wanting to make different things at home:

1) Dehydrator - Doing some real quick research, the Excalibur Dehydrator appears to be top of the line and highly recommended by some leaders in the raw food movement. Other than fairly large size and perhaps loud, any other disadvantages? I'm considering the 5 tray one but was also wondering if there are better brands or equivalent for comparison?

2) Looking for a tool or gizmo that allows for vegetables to be sliced (or turned into) noodle/spaghetti like form. Is a ribbon or spiral slicer what I am looking for? What are some great brands and models?

Any other favorite tools or kitchen toys?

Got a Vitamix blender already, so making nut cheese, nut butter etc and vegan type raw sauces is not an issue.
