A year ago, I had a sit-down meal at Tong Dumpling in the Cupertino Village shopping center that was remarkably disappointing other than the lamb dumplings. https://www.chowhound.com/post/homema... Those were some of the best shui jiao I've had, and I made a mental note to return with an ice chest to buy some of the frozen ones to cook at home.

During shelter-in-place, I've kept my freezer stocked to reduce the number of grocery shopping trips. A couple weeks ago, I was in the South Bay and stopped by Tong Dumpling to fill a hole in my freezer pantry. I picked up the Pork and chive, $30, and Shrimp and chive, $35. Each bag has 50 frozen dumplings. Ladies were at the back counter folding dumplings. They're also available fresh, if you'll be cooking them immediately.

Tong's are on the large size and take a little bit longer to cook. Dropped frozen into boiling water, the pork ones require 12 minutes and the shrimp, 11 minutes, to cook.

The frozen ones cooked at home are terrific too. The wrappers have a slippery, silken mouthfeel and a satisfyingly firm and chewy resistance to the bite without being doughy. Both well-seasoned fillings were deep green in color with more chive than pork or shrimp and needed only a touch of black vinegar as they're on the salty side.
