Toasted Pistachio Gorgonzola Dolce Risotto (from old thread)

Hi All,

I know the discussion about this risotto went on quite a while back, but I have had the recipe sitting around since then waiting for the day when I mustered the effort to source the particular ingredients listed and make it.

Last week I finally got around to it and had to post the results - WOW. I have never eaten a main course, with the same delectability as I would say, the most decadent warm puddingy chocolate dessert - I savoured every single bite, nibbled off the fork, took aaaaages as I wanted it to last and last. It was very very rich (I made one third of the recipe as I figured this was the easiest division for two people and we couldn't get through it) but boy oh boy was it totally worth the $20 of cheese(!!) and the sourcing effort (rice, nuts, wine...). Next time I will make this amount as a starter course for 4 (or even 6) very special people.
