I found this recipe for Apple Oatmeal Muffins and was inspired. Not only does recipe use all ALL oat flour (therefore more fiber) but I felt confident I could make these muffins w/out an added sweeter - the recipe calls for 1/2 cup of Maple Syrup.
I ground the oats, and instead of maple syrup I peeled 5-6 Fuji's, chop 1 and put the rest thru the food processor until they were saucy. I also used butter & oil rather than just oil.
They have been a great hit, everyone in the house loves them. They are just sweet enough for breakfast, and savory enough that I can imagine eating them at dinner with a juicy pork loin or tenderloin.
I want to make these muffins at least twice a week but peeling & grinding all the apples is a mess and hassle. I tried using apple sauce from the store but the result was less sweetness and the texture not as moist.
I would love to hear ideas, and maybe some moral/math support - Like if X is the amount of sugar in 1 Fuji and Y is number of Fujis then X*Y = the amount of sugar I add to applesauce to make up for the loss of sweetness. Right?
