tips for smoked fish

I had some smoked fish (Spanish mackerel, mullet and mahi-mahi) at Ted Peter's Famous Smoked Fish place near St. Petersburg FL last month and want to drag out the old Brinkman and give it a try. Any suggestions on kind of fish, technique, kind of wood chunks, brines, marinades, do's & don'ts, etc? Thanks!
