Tips posting to credit card later?

My beloved cousin was in town a couple of months back, and took several of us out to Fleming's for dinner. She paid and tipped with a credit card. In checking the next day, she saw that the tip hadn't been added to the dinner total. She called the restaurant and was told that sometimes the tip "took a couple of days" to process. If you know Fleming's, you know that it wasn't pocket change. When she got home, she let me know that the tip had, in fact, been processed a few days later, which caused all of us to breathe a sigh of relief, and then to wonder- "Why?"

Does anybody know why this would be?
