Tip-Off: Stillman Farms vs. Stop&Shop Steak Tips

We recently joined the Stillman farms CSA and did the double blind experiment comparing their steak tips with the off the rack Stop&Shop variety. Stillman meat was leaner and remarkably fresh in odor in contrast to the Stop&Shop meat that has a slight rancid fat smell and was certainly fattier (more marbled). Both were subjected to a Korean based marinade overnight and grilled 10 min on one side 5 minutes on the other. Three guests did not know which was which but the two meats were distinguishable by shape (square vs. rectangle). The results: when not overdone, the Stillman CSA wins hands down. The meat was beefier and succulent without as much fat. The Stop&Shop was certainly lush but the overall flavor wasn't as good. The leanness of the Stllman beef made it easier to overcook and one or two precious pieces were like leather. in fairness, the Stillman beef works out to about twice the price, but the quality and the humane treatment of animals (before we gobble the up) is worth it to us.
