As a person who doesn't eat that much meat, facing a fridge full of leftover corned beef is not something I often do. However, after cooking up a boiled dinner a few days ago, I had to do something with the leftover beef, so comfort food to the rescue!
This recipe is straight from my mother...
Cut up the corned beef and add it to a nice white sauce (i used 1/4 butter, 1/4 flour, and about 2 - 2 1/2 cups milk), add salt and pepper to taste, and spoon over toast.
It made a very nice dinner tonight.
