Old-timey household hint

I bought an old cookbook and found this very interesting tip, and wonder if it sounds safe to try:

(Paraphrased)
A left over egg white can be saved for future use if it is placed on a plate and left in a warm place to dry. You can then scrape off the crystals and store in a jar. One tablespoon of crystals dissolved in 2 tablespoons of water will equal one egg white. It will beat up perfectly.
