First time in Rome: 3 nights and four days

Hey everyone. I will be going to Rome for my first time at the end of May. I have reach a bunch of the other posts and appreciate all the recommendations but am slightly overwhelmed all all the options so I pose this question to you. If you only had 3 nights and 4 days in Rome as a first timer, where would you go for your perfect food itinerary (breakfast, lunch, dinner)?

Perilli
Pizzarium
Macheroni
La Tavernaccia
Colline Emiliane
Roscioli
Retrobotegga
Santo Palato
Da Remo

I appreciate all types of food but I definitely want to get the full Italian experience. FYI - Also going to Florence for a night and booked a reservation at Osteria Della Tre Panche. Do you recommend?
