I suppose the other side of the argument is that 100 years of German cutlery can't be wrong. But I'm not a professional, you're not a professional, and we both agree that we don't want to be arsed with having to steel the damn thing every time we use it. That was the deciding factor for me; well, that and having extra cash to buy new knives. The Wusthofs were a pretty penny back in the day and I kept them for years to make up for the outlay.
But to the point, yeah they all work, but so what. It's a personal preference thing.
