Who makes the thickest carbon steel frying pans?

CHSeifert | Jan 7, 202110:23 AM     30

I already own a duo of De Buyer Mineral B Pro carbon steel frying pans for searing steaks. They are 3.2 mm thick (24 cm frying pan) and 3.5 mm thick (28 cm frying pan)

I’m now looking to get the thickest possible carbon steel frying pans for dedicated searing jobs.

What brand out there surpasses 3.5 mm in carbon steel thickness?

I’ve read older cast iron pans had a more polished even interior finish and not the rugged rough kind of bumpy interior finish for instance the Skeppshult raw cast iron pans have.

I wipe and clean my raw cast iron and carbon steel pans with kitchen paper.
This unfortunately gets stuck in small pieces, when I wipe my Skeppshult cast iron pans to an extent where it annoys me and my OCD.

I also find it harder to deglaze a pan with all these small uneven bumps on the interior bottom of the pan, not to mention it will splash making a mess, when I deglaze the pan.
Carbon steel pans have a flush even finish without small bumps on the surface.
So deglazing a carbon steel pan with the smooth surface doesn’t have this problem.

Cheers, Claus
