My husband picked up a package of these, and I thawed them and have to cook them tonight. But I'm feeling tired and unwell today (yay pregnancy), so need some easy suggestions. There are 6, at least an inch thick, 6-8 oz each. So I'd rather not broil or pan-fry with high heat.
I was think of searing and then sort of braising them in the oven with onions, broth, and maybe some red vermouth. Any other ideas? I've got fingerling potatoes and beets I was going to roast together, with oil and dill or fennel, as the accompaniment. Other goodies in the fridge include bell pepper, cilantro, fresh ginger, radishes, mushrooms, way too many lemons and tangerines, condiments galore, but I do need to go to the store soon.
