The third local coffee roaster I tried in Redding in August is Theory Collaborative. As one local friend quipped, it's kind of a stealth coffee company, not offering any clue in the name of the business.
I ordered the Kenyan single origin in a flat white-style cappuccino, along with a blueberry-peach-granola whole milk yogurt parfait. Whereas it was described as an acidic selection when I asked for a profile, the coffee seemed quite earthy and a bit flat to me. The foam was dryish and coarse. I liked the parfait for breakfast, and gained an appreciation for the locally grown peaches.
The staff seemed more closed mouth here than the other cafes, not getting much out of the counter staff or the individual manning the roaster when I tried to ask questions.
When the fires threatened, Theory Collaborativeprovided a gathering place for the community and offered free drip coffee and iced coffee to first responders and evacuees. It recently won a gold medal for its Ethiopia Keramo in the Espresso category at the 2018 Golden Bean North America Coffee Roasting competition in Portland, Oregon.
The coffee culture in Redding was so impressive to this visitor.
