The purpose of this post is to share my frustration and gain some wisdom from a recent mistake I think I made. I have a great recipe for a Thai red curry dish I have made and loved. This last time the dish turned out badly and I think I know why. I have just discovered that the quality and type of coconut milk one uses is very important. In the past I used a certain brand of coconut milk I got at an Asian food store and the result was great. This time I was in a hurry and bought a can of coconut milk from Kroger that was a different brand . . (Thai Kitchen) and the dish turned out thin and watery and not good tasting. Also . . . I just went and recovered the empty can and noticed that it says "Lite coconut milk" . . . and it also says "unsweetened" . . . I just thought coconut milk was coconut milk. I didn't realize there were nuances to it. I'm just wondering if anyone else has made this mistake and gotten bad results . . . or that the brand Thai Kitchen is a low quality brand . . . or if they are able to confirm that perhaps the "Lite" and the "unsweetened" were the problem here. Maybe it was all three issues. At any rate I just wanted to vent my frustration and see if anyone had some insights on this matter. Thanks.
