Texas-style barbecue brisket

Hi ya'll. I just went to the new Barn Burner barbecue restaurant in Pasadena ( They pride themselves in their Texas-style barbecue, so I thought I'd give it a try (being as I'm grew up in Texas).

I walked in and it immediately reminded me of home: big barn with an open dining room, a big Texas flag on one wall, road signs and neon on the others, country music playing in the background, picnic tables for dining tables, paper towels on the tables, very casual. I ordered the brisket and the pulled pork (what was I thinking? pulled pork is from the Carolinas!) and came away disappointed. The brisket was too lean and tough. Not enough flavor. Same with the pulled pork (which should be more vinegary and should have those nice crunchy bits). The sauce was good, but was hoping they would have more than one. The sides, cole slaw and cream corn, were really good, actually. But the bread was disappointing. It seemed to be freshly baked, but only half-baked and mushy.

So, can anyone recommend a place that serves tender, melt-in-your-mouth barbecue brisket? Help!
