I've always enjoyed the pungent aroma of Tete de Moine, but was recently disappointed by a piece I bought at Whole Foods. It had virtually no odor at all! It was a small hunk (maybe 1/3 lb) cut from a larger drum, pre-wrapped tightly in cling wrap. Bringing it to room temp helped a little bit, but it was still way too polite-smelling for me. I don't know a whole lot about cheese, and I haven't bought Tete for a couple of years. Did they change it, or do some markets scrub the rind to remove any potentially offensive odor?
