I was recently in south China and found the tea service in some restaurants very impressive--long lists of various teas, a member of the wait staff whose only function is to make tea, and so forth. The teas were steeped for very short times, 10-15 seconds in most cases.
Recently the NYTimes mentioned a tea pot which mimics the short steeping time to an extent. I ordered one; so far it has been very satisfactory. The link is below.
