A friend made this for me recently and it was excellent -- much tastier than you'd think, looking at the simple recipe, and for me the mint was key. For some reason, all the links to this recipe I found on-line call it Pinto Bean Soup with Mint but then don't list mint in the ingredients. My friend used mint and scallions for the herbs (no parsley or cilantro). He also used homemade creme fraiche instead of half and half, and ground chipotles for the chile. I had leftovers for lunch the last 3 days -- yum.
