Hearing a lot about tasting menus in recent days, and was wondering if there is any tasting menu etiquette. For example, as a foodie, I really enjoy trying new things but I have limits. Many enjoy sweetbreads for example, but I am not sure if I could eat them. Is there flexibility on the menus at Splendido or Perigee? And what if my guest does not wish to order the tasting menu (due to more fussiness)? Can I order it and he not?
