I posted earlier asking for Tas recs - here's where we went in the end...
Daniel Alps at Strathlynn - WOW. like, PHWAOOOOW. we were a huge group (9 people), but were well looked after, and most importantly, everyone's dishes were very good, especially one of them - the roast pork belly - which was mind blowing. unbelievably crisp on the outside, tender and juicy on the inside. Looked similar to Chinese roast suckling pig, except I've never had roast pig this juicy. Brilliant. Great produce, great cooking.
Mud - nice water views, would probably have been better if we went for lunch. good food - again, great produce.
Luck's - very nice, well worth going to. it's good to have a slightly more urban environment after days of nature (sorry, I'm never going to be a country girl, as much as I appreciate farm fresh food and fresh air...)
Mures Upper deck - ok, so this is pretty touristy, but they didn't fiddle too much with the food, which means as long as they have good ingredients, you can't go too wrong.
Didn't have enough time to try the Tassie all-timer Fee & Mee... something for next time.
I think the most important thing about this trip was to remind all us cityslickers that food is really about the produce - it's not like we didn't know in the first place, but experiencing it for yourself is just that much better.
