I bought a package of tapioca pearls to make bubble tea. They are white, about 1/4 inch diameter and made of 98% tapioca starch, 2% water. There were no directions on the package, so I googled it and went with the most common directions. I intended to simmer in water for 15 minutes, then cover and sit for 15 minutes before draining and adding to simple syrup. But, after about 10 minutes I had a pot full of clear gelatinous tapioca and smaller white balls.
Any idea where I went wrong?
