Gary, the lentil soup at Tabla ranked with the best
dal Ive had anywhere. Otherwise, while Tabla applies
Indian spices, it is appears to be within the
framework of western techniques, producing a lighter
less oily product. (such as a light tomato coulis over
steamed eggplant, rather than a fried or roasted
eggplant in a tomato-ey oily gravy.) I myself prefer
the more traditional method - I think the oil deepens
the flavor combinations - but Tabla's dishes in my
experience, have been both delicious in taste and
interesting in execution. The coffee kulfi is very
good and not too sweet.
