I was just looking through some cook books and while leafing through "The Craft of Cooking" by Tom Colchino and came across his recipe for roasted sweetbreads and duck ham. Has anyone made these recipes? How were they? The duck ham looks incredible (takes a month--so should be just ready for my birthday in April if I make it this week. As to sweetbreads, please let me know how you make them--your most delicious recipe. Thanks all.
