I'm having a little difficulty finding a butcher in Manhattan or Queens (preferably) that sells veal sweetbreads. I thought perhaps that some of the Argentinian butcher shops/steakhouses in Jackson Heights might carry them, but I haven't been to any of these places, and most of them seem to be listed as "former butchers". I even checked the West Village Citarella, and they only shrugged. Do you need to be a restaurant chef to purchase good offal?
