Sweet Italian sausage?

I'm planning to make a timpano with sweet Italian sausage. Instead of buying sausages and taking them out of their casing, can't I just buy some bulk ground pork and add salt and spices? (After all, that's all that is on the package's ingredients list.) Is there some secret ingredient I need to know about that makes it "sweet" vs. the "spicy" sausage? TIA!
