super sweet stock

Yikes! I decided to roast some onions and carrots for a
stock and fell asleep, four hours later a sweet aroma permiated (is that a word?) my apt. I opened my oven pulled out the roasting pan and I was greeted by a shocking sight, carmalized onions&carrots I dumped the whole thing into a pot added water and cooked for about 3 hours I tasted the stock it was disgustingly sweet so I dumped the whole thing. please tell me what I did wrong and what i should have done. thanks,
