Back in the late 70's, my grandmother who lived in the areas around Williamsburg VA used to get an institutional size pack of dry cured country ham slices(ready to eat) for making ham biscuits. They were at the time packed by Yoders meats(probably somewhat local) in a 5 lb or 10 lb pack, the slices neatly layered between wax paper. The ham was awesome and very very dry, to the point where they were actually crumbly. Diligent searches have found nothing even close to the product. The ham was very dark in color, probably due to the cure/aging and appeared to have been cut from the ham in this dry state vs. being cut and then dried. If anyone has any info on something similar or remembers this product I would greatly appreciate it
