Sunday dinner + Valentine's Day ideas so far, need help

We're Americans, only in Paris 2 nights, added on to a London business trip. I guess you'd call us foodies-- we like great food, service, atmosphere, and don't mind spending $$ on our meals. However, color me shocked at the prices at the best Paris gourmet restaurants at 2-300euro/pp on the low side plus wine. We will come back another time for this splurge, but for this trip we are treating another couple (from UK) both nights and need to control ourselves. (not interested in trying them for lunch this trip, but read that is a great suggestion for another time)

Night 1: Struggling to decide (even find) something for Sunday dinner with so many places closed. Want it to be somewhat upscale /special because it is Valentine's. We prefer modern trendy vibe over traditional frilly like Le Cinq. (Though this is Paris, that decor seems like the thing? will be fine with traditional decor if food is worth it)
Location doesn't really matter, we are staying near the Pantheon.
Budget a little flexible - 40euro to 80euro pp before wine?

Ideas so far:
**Le Marcab - i read about on this forum.
**Le Coupe Chou rec by hotel, 75euro Vday menu. fun night out or tourist trap? i don't mind popular with tourists as long as it is good.
**Le Christine rec. by hotel.
**Le Petit Bordelais 100 euro set menu for Vday, incl champagne
**Music Hall recommended by hotel, looks funky, lively, fun but food may not be good? is 100euro set menu for VDay.
**Le relais de l'isle

Or something else open on Valentine's Day?

Night 2/Monday: should probably spend less, but so many amazing restaurants, i do want to eat well. lower key is fine though.

**Pinxo this looks like fun, love sharing
**Le kitchen galerie (read about this here, like the asian influence and hip factor)
or any of above.

Thank you for any input, I am so overwhelmed with researching and reading and most of the places closed or just too plain seeming. I think i've looked at 50 restaurants, I can usually narrow it down so much quicker than this, maybe someone can rule some of these out. I'll be grateful for any comments.
