Substitutes to tasting menus Babbo and Bar Service

I swear I had read somewhere, that you could substitute one course at Babbon on the tasting menu. There is a cheese selection followed by 2 desserts. I am not being much of desert person, so I asked if we could add another cheese or something savory in place of one of the deserts, even expressed my willingness to pay extra and was refused.

Very dissapointing.

Also, a note about the bar - great space, not crowded, but the bartenders seem very aloof - you can't seem to make eye contact with them. I joined my date who already had a drink, there were maybe 6 people at the bar and 2 bartenders and waited at least 5 minutes before anyone acknowledged I was there. Perhaps I should have been more assertive, but I found it odd.

Anyone have similiar experiences?
