i've been experimenting with what would replace rice or potatoes with meat in my lunch dishes i pack. i grew up always eating rice with my food, so trying to wean myself off has been a bit hard. so far, soft tofu cut into little pieces and braised for a bit in a little soy sauce and green onions and garlic, etc. and actually, it gives a nice soft mushy mouthfeel that i like about eating starch with meat.
do you have any other ideas?
i've tried the cauliflower "mashed potatoes" already..they're okay, but i don't feel like making them again.
