Now, before you all call me a heretic, let me explain -- I'm having a dinner party this Sunday for 10, the theme's Italian, and after the wonderful threads recently on bruschetta, I've decided that I will make it as an appetizer. However, one of my guests is on a wheat-free diet. So, I'm wondering if there's anything I could provide her with that would serve the same purpose as the bread in the bruschetta. I'm thinking about doing a basic tomato and basil topping, and also a white bean topping. All I can think of is cucumber slices, but that sounds pretty drab. Anyone know of any good wheat-free crackers, or maybe a recipe for something like toasted eggplant or zucchini slices? Thanks!
