taking students to Paris:good and cheap for lunch?

Y'all help me out... I know that there are no shortage of crepe stands and sandwich windows, not to mention kebabs and couscous joints, but, I'd love to hit a decent cafe or bistro for our first lunch. We're staying near Bastille and I was thinking of walking over near Place des Vosges... any suggestions?
I saw the 100 Top Bistros list, and I'm still afraid that many of those will give my girls sticker shock.
I'm more than willing to metro it anywhere in the city if you can think of a great, first impression lunch spot.
