Struggling with noodles

So I enjoy goulash. However I've run into a problem that's become too consistent. When making goulash the recipe I follow directs me to simmer the goulash for half an hour Then add noodles and summer for another half hour. My problem is I some how end up over cooking the noodles almost every time. What's a good way to stay in the recipe but avoid this catastrophe? I just bought a coming thermometer... Should I aim for a basic simmer temp of 195? Even if I do? Should I pull goulash early to avoid over-cooking noodles?
