What should we try on the Strip?

We're longtime Las Vegas visitors who sort of lost track of all the recent additions to the dining scene.

We stay downtown but like to splurge once a trip. I'm a chowhound, will eat anything, but she's a meat-and-potatoes girl. We've enjoyed Commander's Palace, Nob Hill, Emeril's, Circo, Delmonico and Bouchon, and we're looking for a place to try in June -- preferably newish, not seafood- or tasting-menu-focused, not TOO very expensive (maybe a $250 check for two), wouldn't rule out one of the steak places we haven't tried.

Should we finally do Prime (OK, not newish)? Fleur de Lys? Boulud? One of the umpteen other options? Help! What's truly worth the money?
