Storing Cut (raw) Potatoes Overnight

I plan on making corned beef and cabbage tomorrow for St. Patrick's Day, starting a crockpot in the morning and leaving it to cook while I'm at work. I want to prep all the veggies and potatoes tonight so I don't have to get up extra early to do it tomorrow. I searched online a bit about storing cut potatoes in the fridge overnight, and some say to just cover them in plain cold water, while others say to use salted water. Which is better, or what difference does each have on the outcome?
