Stock pot with a valve on the bottom

I have been making metric shit-tons of stock from scratch lately. I have been using a pretty basic stainless stock pot that I keep just for that purpose. I was thinking that it might be a whole lot easier to de-fat if I could just pour off the contents from the bottom using a valve. So I looked it up and behold, someone makes that. Here is one that I found on amazon:
