Since ribs are looking less and less like a specialty, I'm thinking of changing my quest to a perfect Mid-Western steak. The Missouri Beef Industry Council is pushing Mike Shannon's.

Can anyone name any other local (not Morton's or Ruth Chris etc.)steakhouses which excel. I'd be particularly interested in a place that serves grass-fed, dry-aged stuff ...
