Stainless vs Cast Iron vs Carbon Steel 2 handle pan

I am considering a 2 handle frying pan/skillet I can use both on a gas cooktop and in my oven/ broiler. Have been thinking about this on and off for a while and what has inspired me to take action is wanting to make grilled sandwiches following viewing of a new Epicurious video on youtube. But also I see myself using the pan to throw steaks in the oven after seering.

To date I have 2 Demeyere Stainless skillets and 1 blue steel skillet (Mineral B De Buyer). Sounds silly but I want a great grilled cheese Sandwitch and should I expect just as good results with Stainless as I would with Cast Iron?
