A friend and I have visited Pho Anh several times already; he usually orders the pho which he especially likes because they give you plenty of meat. On our last trip, he ordered a vegetarian pho instead, containing tofu, tomatoes and pineapple. There are at least two menus floating about at once, so this dish may not be on the menu you get, but ask for it anyway and they will prepare it for you.
I've opted for their broken rice entrees with either pork chop or pork rind, which I understand to be the stomach lining of pigs. No matter, the rind, shaped like noodles and somewhat transparent, was worth eating despite the origin. And the pork chop was nicely seasoned and not bone-dry. Pungent fish sauce and finely sliced vegetables come with the entrees.
You will find Pho Anh at the site of a former Caravelle(?) restaurant just east of University and Lexington on the north side of University. I forget the side street.
