I wanted to mention a wonderful cut of beef we tried recently. Akaushi (means red cow in Japanese) is available in MN at Kowalski's. The meat is wonderfully rich and buttery, but it is also quite expensive. They are selling different cuts of meat, but we have only tried the ribeye. The meat was perfectly marbled throughout. Because of the marbling, the meat almost looks pink. We just simply grilled our steak to medium rare and was seasoned only with salt and pepper. The meat was remarkably tender, flavorful and buttery. It melts in your mouth almost like chu toro (tuna belly) sashimi. Wonderfully decadent, but definitely, at least for us, not an everyday splurge.
