I once had a fantastic spinach salad with a warm bacon dressing and was excited to try and make it tonight. I went to the farmer's market and got spinach, red onion, avocado...came home to search recipes...and realized I'd forgotten to buy bacon. Um, oops.
I do have some turkey bacon pieces in the fridge (the real kind, but the kind they sell for salads) and would like to satisfy my spinach salad craving...what do you think? The difficulty I'm having is that every recipe calls for using the warm bacon fat as the fat in the dressing, and I obviously won't have any. Should I just use olive oil? Does anyone have recipes that call for using pre-cooked bacon pieces that they can share? Alternatively, I'm perfectly happy to try a bacon-less recipe if it's not too sweet - I just want some warm dressing on spinach!
