I'm making a spinach salad for our annual office potluck holiday soiree. I'd like to make it the night before and had a few questions. My spinach salad usually consists of baby spinach, red onion, mushrooms, bacon and candied/sugared walnuts.
Can I make the entire salad ahead of time? Will the sliced 'shrooms get yucky overnight? How about the bacon (real bacon, rendered, drained and crumbled)?
I'd also like to make the warm bacon dressing ahead of time and then just heat up in the office microwave. Will that be OK? I'm assuming the bacon grease in the dressing will congeal-but will a few zaps in the micro be enough to bring it back to life?
