Here in NYC, as the weather has gotten colder, I have increasingly noticed the delicious smells coming from the food carts cooking meat. Every day when I walk past, I catch a whiff and in that brief interval I try to identify the spices used so that I can replicate it at home (I have yet to actually buy the food and try to ID them by taste.) They smell similiar to the spices used in the food that I get from my neighborhood's Afghan Kebab House, but I have been unsucessful with IDing those as well. Cumin is definitely involved but I don't know what else and none of my cookbooks have been particularly helpful.
What suggestions do you have about great flavorful spice combinations that might help me replicate this food? Even better, what recipes?
