Fabulous Spice Rub for PanSeared Salmon
1 1/2 t. ground cumin
2 t.chili powder
1/2 t. cayenne pepper
1 t. kosher salt
1/2 t. black pepper
This totally rocks!!! Rub it on both sides of a lb or 1 1/2 of salmon, put a little oil in your pan, med-high heat, 3-5 min on each side, and garnish w/fresh cilantro, salsa if you have it...The cumin will make you swoon!! I've been mixing it up in quantity and chowing!!
But it's not quite as good on catfish...The rub recipe I used had sweet paprika, chili, cayenne pepper,salt, a few other things...I could experiment, but anybody got something GOOD????
