GHG's SPICED CHILI-LIME CORN CHIPS
3 T fresh lime juice
1 T oil (i use grapeseed, but you can use any neutral veg oil)
1 tsp. ground cumin from toasted cumin seeds
1 tsp. chili powder (or more to taste)
1 tsp. smoked paprika
1 tsp. fine sea salt
1 pkg. corn tortillas
pour lime juice & oil in a mister/sprayer (i use a Misto) and shake to combine.
combine cumin, paprika, sea salt & chili powder in a small bowl (you can also toss in some ground chipotle for added smokiness).
stack tortillas, cut into triangles & spread out on a sheet pan.
mist triangles lightly with lime juice/oil mixture, and sprinkle generously with spice mixture. bake at 400 degrees for 3-4 min.
remove pan from oven, turn chips over, season other side, and return to oven for another 3-4 min.
cool on a rack for 10-15 min.
if there are any left over (which is rare), they keep well in a sealed plastic bag.

*Note, you can certainly make the tortillas from scratch - which i've been known to do - but most people are more than happy with gussied-up store-bought.
