Okay, so I want to try making a spearmint ice cream or gelato. I specifically don't want peppermint flavor because I find it boring and candylike. However, I've also been unable to find pure spearmint extract. It's always a blend, or I have to by a whole jug online.
I found the recipe below on Epicurious for a basil ice cream, and I'm pretty sure I could do the same thing with fresh spearmint leaves instead.
Has anyone tried this recipe and can offer comments on the texture? I want something smooth and creamy. The only time I've had wonderful spearmint gelato is at Ciao Bella in San Francisco.
Alternatively, has anyone ever made a spearmint ice cream? The recipe calls for scalding the milt, steeping the leaves, blending, cooling, straining, and freezing. Sounds easy enough!
